The French Egg Omelette,I could say is an extension of the ordinary Indian Egg Omelette with added vegetables and peppers.Here is my simple recipe of the filling french egg Omelette,a healthy substitute for anyone either as breakfast or as an evening snack.
Ingredients
Preparation
First wash and chop the spinach,potato and broccoli into very small pieces.
Now cook the broccoli,spinach and potato separately with salt and little water.
Then beat the eggs and add the finely chopped peppers,onion,green chilly,tomato,turmeric powder and salt.
Also add the separately cooked vegetables to the egg mixture.
Heat a non-stick pan.Then pour and spread the egg mixture and sprinkle the parsley,crushed pepper,spring onion and cheese or paneer.Now spray the basting oil on top of this.It adds a good flavour to the dish.
Cook in slow flame so that all the vegetables and peppers will be cooked well.
Turn it aside when its done and apply oil on the edges.
Then switch off the flame when its done and the hot egg omelette is now ready to be served.
Tips
You can choose either paneer or cheese as per your wish.It can also be avoided for good.
I have mentioned here the basting oil which is nothing but the olive oil seasoned with crushed garlic and parsley.For those in US, its available in grocery stores like 'Wegmans' or 'Shoprite'.
For those its not available its ok to leave it.It just adds some flavour.
You can also add mushroom if you wish.To make this omelette more filling, layer it between the bread slices toasted like a sandwich.
